Toms Waterhole Wines and its vineyard are located in Canowindra, part of the Cowra Wine Region.
We are committed to a philosophy of regional excellence and minimum intervention. This means that we fully explore the unique flavours and character of grapes from the district, the concept described by the French as ‘terroir’ – and doing so by letting the grapes “speak for themselves.” We specialise in small batch winemaking with a strong committment to developing a range of organic, no added preservative wines (NAP). In our organically certified winery, chemical enhancements are avoided by making the wine in small discrete batches. Contract winemaking is available.To read the full story click here. We accept that each vintage will be different, depending on the season, however it is already clear that Semillon, Shiraz and (especially) Cabernet Sauvignon from the Canowindra district have some uniquely desirable regional characters that persist from vintage to vintage. Our grape growing and winemaking is intended to enhance these characters especially for the tawny Port solera. Our visitors can taste wines at the cellar door and join our on line shopping club to receive an informative and educational newsletter. Graham our resident winemaker is always available to show you around the winery and discuss winemaking styles and techniques. Wine education workshops including blending trials are held for groups by prior arrangement. The winery cafe serves mostly our own gourmet produce.
